About the Caramel Room at Bissinger’s
The Caramel Room in St Louis is one of the only local area venues that boast a ballroom, modern interior, expansive waterfront views of the Mississippi River, and a 4500 square foot rooftop to soak in the view. The venue’s dramatic glowing chandeliers and large windows allow for ample natural light and incredible city views, unlike any other venue.
Situated on the fourth floor of the Bissinger’s chocolate factory, the 14,000-square-foot venue offers guests a feast for the eyes, and ears, while also tantalizing the palate. Guests will rave about the elegant service, standards, and historic building which will undoubtedly give weddings of all sizes a feeling of intimacy and magic.
Executive chef Nicholas Miller crafts from the freshest local ingredients. But there is far more to the menu than fine dining. Menus will be tailor-made for guests, and, moreover, chocolate-inspired offerings will be a focus. As the venue is a working chocolate factory, there is most certainly the opportunity for chocolate infusion on your wedding menu. Your wedding reception offerings will not just be a simple dinner, but an experience of a complex fusion that combines your style and The Caramel Room’s style!
Why I love this St Louis Wedding Venue
While the iconic “Bissinger’s” sign is no more, the rooftop offers what I consider to be the number one location for rooftop sunset portraits in St. Louis, hands down! Not to mention, the riverfront view is unmatched, and the light is absolutely perfect. Even the interior is surprisingly inviting for a venue of its scale. It’s not hard to fall in love with this space, overall it’s warm and modern, yet not too modern.
Your Wedding at the Caramel Room
The Caramel Room’s accommodating space is ideal for couples hosting weddings with an extensive guest list. All in all, the venue can comfortably accommodate up to 320 seated guests for dinner with the use of the dance floor, or up to 285 seated guests for dinner with the use of the dance floor and the stage!
Additionally, The Caramel Room provides its couples and guests with the following accommodations & amenities:
- 4,500 square foot outdoor terrace with lounge seating, lighting, fire pits, and sound
- 6,000 square foot cocktail area with a large custom bar
- 5,300 square foot ballroom (ADA compliant)
- Hardwood floors throughout
- Custom charger plate
- Complimentary secured self-parking for guests is provided in a secured & gated lot with 190 spots
- Floor-length linens and linen napkins are provided (with a choice of 39 colors)
- All silverware, and glassware provided
- Tea light candles & mercury glass candle holders
- Large inventory of varying table sizes (including 72” rounds, 72” squares, 8’x30” and 6’ x 30” banquet tables, thus allowing nearly any configuration of table arrangements!)
- Chairs provided
- Complimentary use of staging for bands or speakers
- Complimentary menu tasting before your wedding for up to 6 guests
- Use of house sound system for background or dinner music

The following restrictions must be complied with for your Caramel Room wedding:
- All food & beverages (including alcohol) must be provided by the venue
- Likewise, a food & beverage minimum must be met
- General liability insurance is required
- No rice, birdseed, or confetti, etc.
- Smoking is permitted outside only
- Music must end by midnight
